Sausage Peppers And Onions

On days packed with juggling blog deadlines, dashing to the acreage to check on our house build, and making countless design selections, finding the energy to cook can be a tall order. That’s where my Sausage Peppers and Onions recipe swoops in to save the evening!

It’s a real lifesaver, whipping up in just 30 minutes and filling the kitchen with the inviting aromas of juicy Italian sausages, sweet bell peppers, and savory onions. This dish is about creating a moment of comfort amidst the chaos, where everyone can gather around the table and enjoy a meal that’s as satisfying as it is simple.

Ingredients You’ll Need

  • Italian sausage – This is our key ingredient so opt for a good quality sausage. If you’re looking for an alternative, you could try chorizo for a bit of a spicy kick or turkey sausage if you’re after something leaner.
  • Bell peppers – I use a mix of colors for a vibrant look. If you’re looking for something a little bit different, you could try Poblano or Anaheim peppers.
  • Onion – This is another key ingredient in this dish, but if you find onions are too strong for you, try shallots for a milder option.
  • Garlic – Fresh is best, but if you don’t have any, you could use some garlic powder.
  • Olive oil – I like to use a good quality olive oil, because you don’t need a lot. You could swap it with avocado oil or another vegetable oil if you prefer.
  • Dried oregano and basil – These herbs complement the sausages and veggies beautifully. Italian seasoning would be a great alternative here.
  • Salt and pepper –  Always adjust to your taste.
  • Hoagie rolls – If you don’t have any, you can use a baguette, which is what I did and just cut it into 5 or 6 inch pieces.

How To Make Sausage Peppers And Onions

This is such a quick and easy dish to prepare and it’s perfect for a quick, satisfying dinner. The hardest part is just slicing the onions and peppers.

Heat the Oil and Cook the Sausages

Start by heating a tablespoon of olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the sausages. Cook them until they’re nicely browned on all sides, which should take about 5 minutes. After they’re browned, remove the sausages from the skillet. You can slice them into bite-sized pieces if you like, or leave them whole if you prefer.

Sauté the Vegetables

In the same skillet, add the remaining tablespoon of olive oil. Toss in the sliced bell peppers and onions. Stir them around and cook until they start to soften, about 5 minutes. The key here is to let them cook until they’re just tender but still have a bit of a crunch.

Add Garlic and Seasonings

Next, add the minced garlic, dried oregano, dried basil, and a good pinch each of salt and pepper to the skillet. Stir everything together and cook for another minute. This allows the garlic to become fragrant and the herbs to infuse their flavors into the veggies.

Combine and Finish Cooking

Return the sausages to the skillet with the peppers and onions. Reduce the heat to medium and let everything cook together for about 10 minutes, stirring occasionally. This final simmer helps the flavors meld together beautifully and ensures that the sausages are cooked through and juicy.

To serve, fill each roll with a hearty portion of the sausage, peppers, and onions and that’s it. You might want to toast your hoagie rolls to add a bit of crunch, but that’s up to you.

If you want to freeze it, pack the cooled leftovers in freezer-safe bags or containers, and it will be good for up to 3 months; just thaw in the refrigerator overnight before reheating.

  • 1 pound Italian sausage links
  • 3 medium bell peppers (sliced (different colors))
  • 1 large onion (sliced)
  • 3 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • salt and pepper (to taste)
  • 4 hoagie rolls (split lenthwise)

Instructions 

  • In a large skillet over medium-high heat, add 1 tablespoon of olive oil. Once hot, add the sausages and cook until browned on all sides, about 5 minutes. Remove the sausages and slice them if you prefer them in bite-sized pieces, or keep them whole.
  • In the same skillet, add the remaining olive oil, peppers, and onions. Cook for about 5 minutes until the vegetables start to soften.
  • Add the minced garlic, oregano, basil, salt, and pepper to the skillet. Stir and cook for another minute until fragrant.
  • Place the sausages back into the skillet with the peppers and onions. Cook for another 10 minutes, stirring occasionally, until the sausage is cooked through and the vegetables are tender.
  • If you like your hoagie roll crispy, toast it lightly in the oven or on a separate skillet. Open up a hoagie roll and lay down a base of your chosen sauce if using, then pack in a generous portion of the sausage, peppers, and onions.
