Yes, that’s a great idea! Leaving the turkey uncovered in the fridge for up to 24 hours after brining helps dry out the skin, which makes it much crispier when roasted. Just make sure it’s on a rack so air can circulate around it.

Since I found this recipe about 6 years ago I have not gone back to roasting a whole turkey. All my guests always love this turkey because of the moistness and flavour. It is something all my friends and family look forward to. I personally love the smell of the brine liquid after the turkey breast had brined overnight, so fresh.

First time for me to brine a turkey breast and it was delicious! Will always do it this way. Was a bit concerned about the cinnamon with other flavors but it was perfect! And the response from Jo right away about my question regarding extra spices in the roasting process was amazing. Thank you so so much! (Took a photo but can’t seem to upload.)
