You won’t believe how ridiculously good these Chipotle Chicken Wraps are! Juicy, smoky chicken wrapped up with melty cheese, crisp veggies, and a creamy, spicy chipotle lime sauce, this is next level flavor in every bite. Whether you’re meal prepping or need a fast, no fuss dinner, these wraps come together in just 35 minutes and taste like something straight out of your favorite Tex Mex spot. Warning: you might want to make a double batch because they disappear fast!

Before You Start: Read This First!

  1. Marinate the chicken, even if it’s just for 15 minutes! It makes a world of difference in flavor. But if you can leave it for an hour, even better.
  2. Chipotle peppers pack a punch: so adjust the heat! One is mild, two is spicy, three is for the brave. If you love the smoky flavor but not the heat, just use the adobo sauce from the can.
  3. Sear the chicken in a hot pan. If the pan isn’t hot enough, the chicken won’t caramelize, and we want those golden, crispy edges.
  4. Warm your tortillas! Nobody wants a wrap that cracks when rolling. A quick 10-second warm-up makes them soft and pliable.
  5. That chipotle yogurt sauce? Make extra. Because you’ll want to drizzle it on everything.

Ingredients You’ll Need

  • Boneless chicken thighs – I love using thighs because they stay juicy and flavorful, but chicken breasts work too if you prefer leaner meat.
  • Olive oil – Helps the seasoning stick and gives the chicken a beautiful sear. Any neutral oil works, but I wouldn’t skip it!
  • Lime juice – Brightens up the flavors and helps tenderize the chicken. Lemon juice works in a pinch!
  • Chipotle peppers in adobo sauce – The smoky, spicy star of this dish! I chop or puree them, depending on how much heat I want. If you want mild wraps, just use the adobo sauce.
  • Garlic powder, cumin, smoked paprika, onion powder – This combo adds depth, smokiness, and a little warmth. Regular paprika works if you don’t have smoked.
  • Large tortilla wraps – I go for soft flour tortillas because they roll up easily and hold everything together. Whole wheat or spinach wraps work too!
  • Monterey Jack cheese – Melts beautifully and adds a mild creaminess. Mozzarella or cheddar are great swaps.
  • Red onion & bell peppers – They add crunch and sweetness. Feel free to use any color bell pepper!
  • Romaine lettuce – For that crisp, fresh bite. Iceberg or mixed greens work too.

For the Chipotle Lime Yogurt Sauce

  • Greek yogurt & mayonnaise – The perfect mix of tangy and creamy. You can use all yogurt for a lighter version, but I like a bit of mayo for richness.
  • Lime juice – Keeps it fresh and zesty.
  • Garlic powder & reserved adobo sauce – Boosts the smoky, garlicky kick. Adjust the adobo sauce based on your spice preference.
  • Fresh cilantro – Adds a bright, herby finish. If you’re not a fan, just leave it out!

How To Make Chipotle Chicken Wraps

Marinate the Chicken for Big Flavor

Toss the chicken, garlic, smoked paprika, cumin, onion powder, salt, lime juice, and chipotle peppers into a bowl. Give it a good mix. If you want extra smooth flavor, blend the chipotle peppers into a paste before adding. Let this sit for at least 15 minutes, but if you can give it an hour, even better.

Cook the Chicken (The Right Way!)

Heat a skillet over medium-high heat until hot, seriously, let it heat properly. Then add the chicken and spread it out so it’s not overcrowded. If you dump everything in at once, the chicken will steam instead of sear.

Cook for 8 to 10 minutes, stirring occasionally, until golden brown with crispy edges. Remove from the pan and set aside. Try not to eat it all before assembling the wraps.

Make the Chipotle Lime Yogurt Sauce

While the chicken is cooking, stir together Greek yogurt, mayo, lime juice, garlic powder, adobo sauce, salt, pepper, and fresh cilantro. Adjust the adobo sauce depending on how spicy you like it. Then taste it, because this sauce is everything.

Warm Your Tortillas (Don’t Skip This!)

Cold tortillas crack. Solution? 10 seconds in a dry pan or microwave. Just enough to make them soft and flexible for rolling.

Assemble Like a Pro

Now, layer smart:

  1. Cheese first – This way, the warm chicken melts it slightly. (Do as I say not as I did)
  2. Chicken next – Juicy, smoky, delicious.
  3. Veggies – Red onion, bell peppers, and romaine lettuce for crunch.
  4. That sauce – Drizzle generously. Don’t be shy!

Wrap & Serve!

Fold the sides over, then roll it up nice and tight. If it’s overstuffed, don’t force it, just go lighter on the filling next time. Slice in half, wrap in foil for that café-style feel, and devour immediately.

Or, if you’re meal prepping, keep the lettuce and sauce separate until ready to eat. These hold up great for a couple of days!

These wraps are a full meal, but if you want a little something extra, here are my go-to sides:

Frequently Asked Questions

Can I use chicken breast instead of thighs?

Absolutely! Just be careful not to overcook, breasts dry out faster than thighs. I’d suggest pounding them slightly so they cook evenly, or even slicing them into thin strips before marinating.

How spicy are these wraps?

It depends on how many chipotle peppers you add! One is mild, two is medium, and three is spicy. If you just use adobo sauce (without the peppers), you’ll get all the smoky goodness without the heat.

Can I make these ahead of time?

Yes! These wraps hold up really well for meal prep. Just keep the lettuce and sauce separate until you’re ready to eat. Or, if you’ve already assembled them, wrap them tightly in foil or parchment paper and store in the fridge for up to 2 days.

Can I make them dairy-free?

Totally! Skip the cheese or use a dairy free alternative, and swap the Greek yogurt for coconut yogurt or a plant-based version.

What’s the best way to reheat them?

If they’re already assembled, a dry pan over medium heat for about a minute per side works best, it’ll crisp up the tortilla while keeping the inside warm. If you just need to reheat the chicken, pop it in a skillet or microwave until warm.

Can I freeze these wraps?

Not a great idea. The lettuce gets soggy and the tortillas turn rubbery when thawed. If you want to prep ahead, freeze just the cooked chicken and assemble fresh when ready!

  • 2 pounds boneless chicken thighs (cut into cubes)
  • 2-3 chipotle peppers in adobo sauce (adjust for heat)
  • 3 cloves garlic (minced)
  • salt (to taste)
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin powder
  • 1 teaspoon onion powder
  • 1-2 tablespoons lime juice
  • 3 tablespoons olive oil
  • 6 large tortilla wraps
  • 1 cup Monterey Jack (shredded, or mozzarella cheese)
  • 1 small red onion
  • 1 cup bell peppers (chopped)
  • 2 cups romaine lettuce (shredded)

Chipotle Lime Yogurt Sauce:

  • 6 tablespoons Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon lime juice
  • salt and pepper (to taste)
  • 1 teaspoon garlic powder
  • 1 tablespoon reserved adobo sauce (adjust for spice level)
  • 1 tablespoon fresh cilantro (chopped)

Instructions 

  • In a large bowl, combine the chicken pieces, minced garlic, smoked paprika, cumin powder, onion powder, lime juice, and salt. Adjust the heat by adding chipotle peppers in adobo sauce (chopped or pureed, depending on your preference). Drizzle in the olive oil and mix until the chicken is well coated. Let it marinate for 10-15 minutes.

  • Heat a large skillet over medium-high heat. Add the marinated chicken and cook, stirring occasionally, until browned and cooked through, about 8-10 minutes. Set aside.

  • In a small bowl, whisk together the Greek yogurt, mayonnaise, lime juice, garlic powder, reserved adobo sauce, salt, pepper, and chopped cilantro. Adjust seasoning as desired.

  • Lay each tortilla flat and top with shredded lettuce, chicken pieces, red onion, bell peppers, shredded cheese. Finally, drizzle with plenty of the chipotle yogurt sauce. Fold the sides of the tortilla over the filling and roll tightly to close the wrap.

Notes

  1. Chicken: I use boneless, skinless chicken thighs because they stay juicy and tender, but chicken breast works too, just don’t overcook it!
  2. Chipotle Peppers: These bring heat and smokiness. One pepper is mild, two is medium, three is spicy! For just smoky flavor, use the adobo sauce only.
  3. Cheese: Monterey Jack melts beautifully, but cheddar, mozzarella, or pepper jack work great too.
  4. Tortillas: Flour tortillas roll the easiest. Corn tortillas tend to crack, so if using those, warm them well first.
  5. Make-Ahead: You can cook the chicken up to 3 days in advance and store it in the fridge. Assemble the wraps fresh for the best texture.
  6. Storage: If storing assembled wraps, wrap them tightly in foil and refrigerate for up to 2 days. For meal prep, keep the sauce and lettuce separate to prevent sogginess.
  7. Reheating: If assembled, warm in a dry pan over medium heat for a minute per side. If just the chicken, microwave or reheat in a skillet.
  8. Freezing: Not recommended once assembled, the lettuce and sauce won’t hold up. But you can freeze the cooked chicken for up to 3 months!
