My Mom’s White Bean Dip

This White Bean Dip might sound like party food, but for me, it’s pure nostalgia. I grew up eating this stuff as a side dish because my mom made it all the time, usually in quantities big enough to feed half the neighborhood. We’d scoop it up with bread, pile it next to our meals, or sneak spoonfuls straight from the bowl. And honestly? I’m still guilty of that last one.

Before You Start: Tips & Ingredient Notes

  • Beans: Cannellini are my favorite for their creamy texture, but any white beans like navy or great northern will work just fine.
  • Lemon Juice: Fresh is a must. The bottled stuff just doesn’t have the same zing.
  • Garlic: Two cloves is my happy place, but add more if you want to keep vampires, and maybe people, away.
  • Olive Oil: Use a good extra virgin one, since you’ll taste it. Don’t break the bank, but skip the bargain jug.
  • Cumin: This is not something my mom would add, but I think just a pinch adds warmth and depth. Totally optional, but I love the subtle earthiness it brings.
  • Adjusting Consistency: Start thick, then thin it out gradually with water or vegetable broth until it’s scoopable or spreadable, your dip, your rules.
  • Chill Time: Not strictly necessary, but if you have 30 minutes, the flavors meld beautifully.

This dip is perfect with pita chips, tortilla chips, breadsticks, crackers or veggies sticks like carrots, cucumbers and bell peppers. But here’s how you can pair it:

Frequently Asked Questions

Can I make this white bean dip ahead of time?

Absolutely. In fact, the flavors get even better after chilling for a bit. Make it a day ahead, stash it in the fridge, and pretend you’ve got your life together.

How long does it last?

About 4-5 days in the fridge, stored in an airtight container. It probably won’t last that long once you start dipping.

Can I freeze white bean dip?

Not my favorite idea. Freezing changes the texture and makes it watery when thawed. It’s best fresh from the fridge.

Can I use dried beans instead of canned?

Totally! Just cook them until they’re nice and soft. But honestly? Canned beans make this a 5-minute miracle.

Is it vegan?

Yep! Naturally vegan and gluten-free. So go ahead and brag about it to your friends.

White Bean Dip – smooth, creamy, and ready in just 5 minutes. Loaded with garlic, lemon, and olive oil, this dip is perfect for scooping up with chips, crackers, or veggie sticks. A quick, healthy snack that’s full of flavor!

Ingredients

  • 15 ounces cannellini beans (or any white beans, drained and rinsed)
  • 2 cloves garlic (minced)
  • juice from 1 lemon (about 2–3 tbsp)
  • 3  tablespoons olive oil (extra virgin, plus extra for drizzling)
  • salt and pepper (to taste)
  • ¼  teaspoon cumin
  • 2-3 tablespoons vegetable broth (or water, to adjust consistency)
  • 2  tablespoons fresh parsley (chopped, for garnish)

Instructions 

  • In a food processor, combine the drained beans, minced garlic, lemon juice, olive oil, salt, pepper, and cumin. Process until smooth and creamy. If the mixture is too thick, add vegetable broth (or water) gradually until you reach your desired consistency.

  • Give your dip a quick taste and adjust the seasoning as needed, sometimes a little extra lemon or salt makes all the difference.
  • Transfer the dip to a serving bowl. Drizzle a little extra olive oil over the top and sprinkle with the chopped parsley.

  1. Beans: Cannellini beans are my fave for creaminess, but great northern or navy beans work well too.
  2. Adjust Consistency: Start thick, then add broth or water a tablespoon at a time until you hit your perfect dip texture.
  3. Flavor Boost: Don’t skip the fresh lemon juice, it brightens the whole dip.
  4. Chill It: Let the dip chill for 30 minutes if you’ve got the time. It makes the flavors even better.
  5. Storage: Keeps in the fridge for 4-5 days in an airtight container. Not great for freezing, the texture changes too much.
