Let me tell you about the fries that ruined me for plain fries forever. I met them in Quebec City at a little microbrewery called Archibald. They casually tossed banana peppers on top of gravy‑soaked fries like it was no big deal. I took one bite and immediately thought, Oh, we’re doing THIS now?
Fast forward to me in my kitchen recreating them. Fries, homemade gravy, bacon (because duh), banana peppers (don’t question it, just try it) and a final drizzle of mayo. They’re messy, they’re over the top and they are absolutely not first‑date food, which somehow makes them even better.
These are my “Friday night, sweatpants, no regrets” fries. Perfect for game day, midnight cravings or when you’re trying to bribe your family into doing the dishes.

Dirty Fries
Ingredients
- 1 pound potato fries (I used McCain)
- 6 slices bacon (chopped and fried)
- ½ cup banana peppers
- 3 green onions (chopped)
- 1 medium tomato (chopped)
- 1 tablespoon fresh parsley (chopped)
- ¼ cup mayonnaise
For Gravy
- 1 tablespoon butter (unsalted)
- 1 tablespoon all-purpose flour
- ½ cup beef broth (low sodium)
- ¼ teaspoon salt (or to taste)
- ¼ teaspoon pepper (or to taste)

Instructions
- Preheat the oven to 450℉.
- Place the potato fries in a single layer on a baking sheet, no need to grease the baking sheet. Bake the fries for 15 to 18 minutes or until golden and crispy.
- In the meantime, prepare the gravy. In a small saucepan, melt the butter over medium-high heat. Add the flour and whisk until it becomes paste and it slightly turns brown.
- Add the beef broth a little bit at a time, whisking constantly until all the broth has been added. Continue to cook for a another minute or so until the gravy thickens. Season with salt and pepper.
- To assemble the fries, place the fries in a plate, drizzle generously with gravy, top with bacon, banana peppers, green onions, tomatoes and parsley, then finish off with a drizzle of mayonnaise.
Notes
- Fries: Frozen works great for speed, but hand cut fries are amazing if you’ve got the time. You can also air fry them at 400°F for about 12 to 15 minutes, shaking the basket halfway through.
- Bacon: Cook until crispy so it stays crunchy under the gravy.
- Banana peppers: The tang cuts through all the richness. Don’t skip them unless you absolutely have to.
- Mayo drizzle: Thin with a splash of milk for smooth drizzling.
- Make ahead: Cook bacon and make gravy ahead, then assemble fries just before serving for the best texture.
- Variations: Try sweet potato fries, add cheese curds, or swap banana peppers for jalapeños for extra heat.
