Hi! Yes, you can—chuck roast is great for slow roasting. After the initial 25 minutes at high heat, you can cover it for the rest of the cooking time to help retain moisture.

This was the first time in my 65 years that my roast came out so tender and juicy.I followed the recipe to a T and my roast was delicious an I like it done medium well and it was perfect.All cooked through with a slight bit of pink.This is definately my go to roast menu that I will now use forever.Thank You.
