You can absolutely brine them! A simple salt, sugar, and water brine for a few hours (or overnight) works great. If you’re short on time, you can skip it. Cornish hens are naturally tender and still turn out great without brining.

I’m happy to report that tonight it was once again incredible! 10/10! It makes me want to bring Cor ish Hens back into regular rotation. This recipe is an easy weeknight dinne (not too much prep). I served it with roasted carrots, roasted asparagus, and white rice that I cooked in chicken broth and drizzled fresh lemon juice. I’m happy and full!
