My Favorite Honey Roasted Carrots Recipe

I like to serve carrots alongside many dinners, but I must say that these honey roasted ones are by far much better than plain Jane carrots. They’re so good, I love to snack on them all by themselves.

All you need to do is combine olive oil, sweet honey, garlic powder and a bit of salt and pepper, then pour over the carrots and roast. Now here’s the best part; when you combine all these flavors, then roast the carrots in the oven, you end up with one easy side dish that will complement any dish to the max. That extra caramelized sweetness really does make all the difference.

I make these when I want a side that feels special but doesn’t feel like work. Plus, these carrots are basically dessert.

Honey Roasted Carrots Highlights

  • Flavor Bombs. Oh, did I mention how delicious these carrots were? They sure pack a big punch of bold flavors. One of the best carrot recipes out there!
  • Crowd Pleaser. I enjoy roasting these up for a crowd because of how simple and perfect they are for a large number of people. Perfect for when you’re hosting a holiday dinner!

Ingredients You’ll Need

  • Carrot size. Try to pick carrots that are medium thickness for even roasting; if large, cut in half lengthwise.
  • Honey vs alternatives. Real honey is best. You can sub maple syrup or agave, but flavor changes slightly.
  • Oil and coating. Use enough oil so the glaze slides, but not drowning, you want every carrot bit coated lightly.
  • Placement on pan. Give space. Carrots crowded = steam, not roast. Single layer is key.
  • Sugar burn safety. Watch the glaze. If it’s darkening too fast near the end, tent with foil.

How To Make Honey Roasted Carrots

Prep the carrots.

Get your oven nice and hot at 400°F (204°C). Give your carrots a good scrub or peel if you prefer them ultra smooth. Trim the tops but leave a bit of green for looks, it makes them feel fancier than they really are.

Mix the glaze.

In a small bowl, whisk together honey, olive oil, garlic powder, salt, and pepper. Taste it! The glaze should be balanced, sweet, garlicky and just salty enough. If your honey’s super thick, warm it a few seconds in the microwave so it blends easily.

Coat the carrots.

Toss the carrots right on the baking sheet or in a big bowl until every piece glistens. You want them shiny but not swimming, too much oil and they’ll roast unevenly.

Roast to perfection.

Spread them in a single layer and pop them in the oven for 25–30 minutes, flipping once halfway through. You’re looking for slightly wrinkled edges and that deep orange color that means the sugars have caramelized. Pull them out, drizzle a bit more honey if you want extra shine, and sprinkle chopped parsley for a pop of color.

Frequently Asked Questions

What kind of carrots should I use?

Whole carrots work beautifully, especially when you leave a bit of the green tops on for presentation. Baby carrots also work, but they’ll cook faster, so start checking them around the 15-minute mark.

Do I have to peel the carrots?

Nope. If your carrots are fresh and scrubbed clean, the peel adds a nice rustic flavor. Peel them if you want a smoother texture or a cleaner look.

Why are my carrots burning?

Honey caramelizes quickly, which is great for flavor but easy to overdo. If the edges start getting too dark, cover the pan loosely with foil or lower the oven temperature slightly.

Can I make them ahead of time?

Yes. Roast them earlier in the day, then reheat at 350°F for about 10 minutes before serving. Brush on a little more honey before reheating to bring back that glossy finish.

Can I use something other than honey?

Definitely. Maple syrup is a fantastic substitute with a deeper, more earthy sweetness. You can also use agave if you prefer something milder.

How do I know when they’re done?

They should be fork tender but not mushy, with golden edges and a shiny, caramelized glaze.

Sweet, garlicky, and perfectly caramelized, these Honey Roasted Carrots are an easy side dish that always steals the show. A simple mix of honey and olive oil turns plain carrots into glossy, golden perfection. Quick enough for a weeknight dinner and special enough for the holidays.

Ingredients

  • 2-3 pounds carrots (peeled and trimmed)
  • 3 tablespoons olive oil
  • ¼ cup honey
  • 1 teaspoon garlic powder
  • salt and pepper (to taste)
  • 2 tablespoons fresh parsley (chopped)

Instructions 

  • Preheat your oven to 400°F.
  • In a small bowl whisk together the olive oil, honey, garlic powder salt and pepper.
  • Arrange the carrots in a single layer on a baking sheet. Drizzle the honey mixture over the carrots and toss them around to make sure the carrots are thoroughly coated.
  • Place the baking sheet in the oven and roast for 25-30 minutes or until the carrots are tender and start to brown.
  • Garnish with fresh parsley and serve immediately.

Notes

  1. The baking time can vary based on how thick your carrots are. You want to cook them until they’re fork tender.
  2. Play around with spices for different flavor profiles. Try adding a pinch of cinnamon or nutmeg to the honey mixture. 
  3. You can also use baby carrots if you prefer.
  4. For a change, use equal amounts of maple syrup, agave syrup or even brown sugar.
  5. Any protein such as chicken, turkey, pork or beef goes very well with these carrots.
  6. Try using this honey mixture on different veggies, such as brussels sprouts, asparagus or butternut squash.
  7. Place cooled honey roasted carrots in an airtight container and store in the refrigerator for 3-5 days.
