I used this recipe for a special New Years Day dinner. We found 1 cup of red wine in the gravy to be way too much, would drastically reduce this next time, maybe 1/4 cup. Roast was tasty. I put potatoes in the pan in the last hour. My usual recipe stated 3 hours at 325 degrees for medium cooked roast and against my better judgement I trusted your directions, after 2 1/2 hours of roasting the roast reached medium rare which made dinner quite late. My oven is new and I have tested the temperature with a meat thermometer and is pretty accurate. Will allow more time next time.

Excellent recipe. This was my first time preparing a rib roast. Got a late start by not taking it out to defrost overnight but it was moist and delicious. Definitely a hit! I will make it again!
